Shoyu Broth with Udon Noodles & Mochi Croutons





4 dried shiitake mushrooms (best soaked in water for 20 minutes)
8cm kombu
1 sachet kombu-shiitake dashi

cups water

1-1 1/2 tbsp shoyu
Lotus Root, sliced thinly or a few slices of dried lotus root (soak for 20 minutes)
Carrot, matchsticks
Daikon Radish (Mooli), matchsticks
2 squares of Genmai Mochi Kiri with Brown Rice
