Lemon & Cardamom Festive Truffles

Ingredients make roughly 12-16

 500g organic dates

 3 tbsp organic raw cacao powder

 3 tbsp organic raw cacao butter

 3 tbsp. Great lakes Gelatin hydro (green tub)

Zest of 2 lemons

1-2 tsp cardamom powder

Additional cacao powder for dusting

 

 

1.     Soak the dates in freshly boiled water for 5 minutes, then drain well

2.     With the motor running, pop all ingredients into a food processor and wiz until smooth

3.     Shake out some cacao powder onto a plate, dust the plan of your hands with cacao then roll the ate mixture into even balls between your palms, finishing by rolling them in the cacao powder

4.     Refrigerate to set for a few hours, ideally overnight

 

5.     Store in the freezer and remove a couple of hours before you wish to eat
