I made this today and I have to admit, there isn’t much left now and I was the only one that ate it!! This recipe for fudge is so good, so authentic and FAR healthier than the typical fudge that you can buy.
Chocolate Cashew Butter Fudge
1 cup of cashew butter (make this in high speed blender)
1/4 cup of cacao powder ( i used 50/50 carob and cacao)
2 tablespoons of maca powder
2 tablespoons of raw honey (can use agave)
2 tablespoons of coconut oil
optional cocao nibs, pieces of nuts
Basically you just mix everything together with a big wooden spoon in a bowl. It’s that easy! then when its all mixed together spoon into a flat dish and spread it out so its even. You can make whatever shape’s you like but I chose to make the typical fudge squares. I liked the mixture better when put in fridge for awhile as well. It makes a good size batch probably about 30 bite size pieces!
Watch out, its that good that you might not be able to stop eating it!
But just so u know you shouldn’t feel too guilty, the ingredients in here are wonderful!
Raw Choc powder is loaded with antioxidants (gotta be raw powder though!) and coconut oil has a list as long as your arm full of nutrients and minerals. These two alone are superfoods!
Unless allergic to nuts, this fudge would be great for kids who eat far too much sugar, test this out on them and I bet they won’t even know its not commercially made!!
